2 cups all purpose flour
2 cups yellow cornmeal
2 Tbs baking powder
1 tsp salt
1/2 tsp black pepper
1 1/2 cups whole milk
2 sticks unsalted butter, melted
1/4 cup honey
2 large eggs
3/4 cup cheddar cheese, grated
1/3 cup jalapeños, finely chopped
1 jalapeño, sliced paper thin
Directions
- Preheat oven to 350° F. Spray a 9-inch cast-iron skillet with cooking spray. In a bowl, combine the flour, cornmeal, baking powder, salt and pepper. Stir to combine.
- Add milk, butter, honey, eggs, cheese and chopped jalapeños. Stir together until all ingredients are incorporated. Pour the batter into the skillet, and top with jalapeño slices.
- Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Let cool slightly before serving.
